Ingredients
• 4 cups water
• 1 teaspoon salt
• 1 cup uncooked stone-ground grits
• 2 tablespoons butter
• 1/4 teaspoon freshly ground black pepperDirections
1. Bring the water and salt to a boil in a heavy saucepan.2. Gradually whisk in the grits.
3. Reduce heat and simmer uncovered, stirring often, for 20–25 minutes, or until thick and creamy.
4. Remove from heat; stir in butter and pepper.
